Soave DOC “Drops By” by Cecilia Beretta, closed with a screw cap, shows a bright straw-yellow color with slight greenish reflections. On the nose it offers a clear bouquet with aromas of white-fleshed fruit and small flowers, accompanied by a hint of minerality that keeps the whole fresh and linear. Olfactory intensity is moderate and well balanced; the palate texture is fine, without weight. On the palate it is slender, with balanced acidity and a slightly saline sensation that supports the drinkability; the finish is clean and inviting without excessive aromatic intensity.

A ready-to-drink wine, suitable for light days and for accompanying appetizers, lightly prepared fish dishes and fresh cheeses. It also works well as an aperitif or with simple Mediterranean cooking, thanks to its freshness and clean aromatic profile. The screw cap makes opening and short-term storage easier; it is recommended to serve it chilled to appreciate its liveliness. When enjoyed young it best preserves its olfactory and gustatory characteristics; ideal for those seeking a straightforward, well-kept everyday white.

Winery history
Originally conceived as a project of the Famiglia Pasqua in the early 1980s, Cecilia Beretta takes its name from the historic Villa Beretta in Mizzole. The label was created to showcase the traditional expressions of Valpolicella and Soave through targeted technical interventions and the input of oenologists such as Carlo Olivari and, in more recent years, Graziana Grassini.
Production philosophy
An approach that combines respect for the land with stylistic exploration: the revival of indigenous grape varieties, the enhancement of the local terroir, and the selective use of traditional techniques such as appassimento, alongside sustainability initiatives and the conversion of vineyards to organic farming.
Terroir and vineyards
The vineyards are located in the hilly amphitheatre of Valpolicella and in the hills of Soave. Soils are predominantly calcareous-clayey, with volcanic portions in the Soave area; average elevation 150–200 m.
Awards and recognitions
Among the accolades: Tre Bicchieri awarded to Amarone Terre di Cariano 2018 Cecilia Beretta; the label also appears in various mentions and scores from guides and critics.
