Il Cerrus è il primo spumante metodo classico prodotto nelle nostre Tenute.Originale e di spiccata personalità, valorizza egregiamente le migliori uve bianche dei nostri vigneti, scelte per questa "prima assoluta" nella storia spumantistica di Fattoria del Cerro.

Le uve sono pressate in maniera soffice, la lunga e lenta fermentazione avviene a temperatura controllata (12° - 14° C) per garantire una buona concentrazione aromatica. Al termine della fermentazione alcolica il vino viene rimane sulle proprie fecce fini per 3 mesi fino
all'imbottigliamento momento nel quale viene aggiunto il liqueur de tirage e il vino subisce una lenta presa di spuma per minimo 24 mesi.

Si presenta alla vista di colore giallo paglierino intenso con riflessi dorati, al naso si percepiscono note floreali con sentori di crosta di pane, in bocca il gusto è pieno con un perlage fine e persistente. Ideale come aperitivo, ottimo in abbinamento ad antipasti a base di pesce, verdure e formaggi, crostacei in genere, così come paste e risotti a base di pesce e verdure.

Winery history
Fattoria del Cerro is part of the Tenute del Cerro project and is listed among the major wine estates in the Montepulciano area. According to the estate's official information, the property includes vineyards registered on the Vino Nobile register and also offers hospitality services and dining, as well as tours and tastings.
Production philosophy
The winery showcases the area's indigenous varieties, with a clear focus on Prugnolo Gentile and targeted clonal selection for quality. Production aims to express the terroir through grape selection, aging in barrels, and wine tourism experiences that combine wine and hospitality.
Terroir and vineyards
Located on the hills of Montepulciano, the estate extends over a large landholding with varying aspects and soils that allow the selection of the best parcels for each vintage. For some wines, technical details indicate hill elevations and soil composition with the presence of pebbles and fossils; for specific labels, altitudes of around 350–450 m a.s.l. are reported.
