Etna Gaudensius Blanc de Noir is a Classic Method Spumante, an evocative blend between Nerello Mascalese and the Etna area.
A wine of absolute style and elegance whose grapes are harvested manually towards the second week of September and immediately delivered to the cellar where they receive a soft pressing of the whole bunches and not de-stemmed, starting the white vinification without contact with the skins. The refermentation is carried out in the bottle in contact with the yeasts for at least 36 months, with frequent manual remuage to facilitate the olfactory complexity and the perlage of rare elegance, Firriato's first Classic Method.
It has an aristocratic straw yellow color with rich golden hues; on the nose it is fragrant, particularly intense and fruity with natural Sicilian citrus fruits, with sweet aromas of brioche and peanut butter and mineral hints, star anise and marzipan. The taste is decidedly complex and full-bodied, very structured, capable of amalgamating delicacy and fragrance with marine verve, directing towards a tasty almond and currant finish.
A great sparkling wine suitable to be served with a sumptuous aperitif based on canapes and savory pies; perfect with sardines a beccafico and special to be served in combination with ricotta and spinach ravioli seasoned with butter and sage.
