The "Fulvio Beo" from Cà Rugate is a sublime expression of the Classic Method sparkling wine, produced in a prestigious 9-liter Salmanazar, ideal for grand celebration occasions. Characterized by its Extra Brut profile, this sparkling wine offers an intensely fresh and minimally sweet taste experience, with an extremely low sugar residue that accentuates the natural characteristics of the grape variety and the terroir of origin.

The grapes selected for the "Fulvio Beo" are handpicked in the early hours of the morning, to ensure the freshness and integrity of the berry. The first fermentation takes place in stainless steel tanks at controlled temperatures, followed by a second fermentation in the bottle according to the rigorous Classic Method, which involves a maturation period on the yeast not less than 36 months. This long rest in the cellars of Cà Rugate gives the wine complexity, a fine perlage, and a creamy texture.

Visually, the "Fulvio Beo" presents a bright straw-yellow color, embellished by a very fine and persistent perlage. On the nose, vibrant notes of citrus, green apple, fresh bread, and hints of almond emerge. On the palate, it is extremely balanced: the freshness of the acidity is well balanced by the structure and aromatic complexity, ending with a long and memorable persistence that invites another sip.

Perfect as an aperitif, the "Fulvio Beo" Extra Brut is also an excellent companion for light starters, raw fish, and seafood. Its elegant presentation in a Salmanazar bottle also makes it a spectacular centerpiece for any festive table.
