Castè - Name given to the Colle il Castello which rises up behind the cellar.
Produced through skin maceration, with gentle squeezing, then the must obtained is placed directly in an autoclave for the prise de mousse for about 60 days. Finally after two months it passes to the last phase in which it is stationed on its lees for another 100 days or so.
With a classic straw yellow color and greenish reflections. In the glass it sizzles with a dense foam almost like a beer with a density.
Juicy, pulpy and fresh. Fantastic if drunk cold in the company of friends.
On the palate it is very long and persistent, of great elegance with clear references to ripe apple.
