The Veronese Rosso IGT "Calinverno" comes from grapes left to overripe in the vineyard until the time of the harvest, which runs from the end of October to mid-November. After harvesting, the grapes go to the fruit cellar for a drying period and are then de-stemmed and crushed. After fermentation, the wine is aged in barriques and tonneaux.
It shows a ruby red color. The olfactory profile is expressed with fruity aromas of blackberry, raspberry and cherries in alcohol, to which are added herbaceous notes and nuances of dried flowers, as well as hints of tobacco and chocolate. A complex sip with good consistency, an elegant, full-bodied and balanced tannin that seduces and conquers the palate from the first sip.
It is recommended to combine it with red meat main courses, mixed cold cuts and porchetta and aged cheeses.
