The Vin Santo del Chianti Classico "Occhio di Pernice" in 375ml format from Badia a Coltibuono is a sweet wine of exceptional quality and rarity, which represents a particularly refined and intense variant of the traditional Tuscan Vin Santo. This label stands out for the predominant or exclusive use of Sangiovese grapes, which give the wine a characteristic intense rosé color, similar to the "partridge's eye", and a unique aromatic complexity. The production of "Occhio di Pernice" follows the meticulous process used for Vin Santo, with the drying of the grapes which concentrates sugars and aromas, followed by a long fermentation and maturation in small wooden containers, the caratelli, where the wine acquires its distinctive notes.

The Badia a Coltibuono winery, with its centuries-old history and deep connection with the Chianti Classico territory, has excelled in the creation of this Vin Santo, a sublime expression of the region's oenological heritage. The 375ml format is ideal for savoring this jewel of the Tuscan wine tradition, offering the possibility of sharing an intense and memorable tasting experience.

Visually, the Vin Santo "Occhio di Pernice" has a deep pink amber color, which anticipates the richness of its bouquet. On the nose, intense notes of dehydrated red fruit unfold, such as cherries and plums, enriched by nuances of honey, sweet spices, cocoa and a light touch of almond, all framed by a subtle oxidative vein that adds complexity and depth to the aromatic profile .

In the mouth, the wine surprises with its exceptional concentration and balance between sweetness and acidity, with flavors that faithfully reflect the olfactory notes and are enriched with a pleasant complexity. The texture is rich and velvety, with a long and persistent finish that leaves an impression of elegance and refinement.

Ideal as a meditation wine or paired with dried fruit-based desserts, blue cheeses or foie gras, the Vin Santo del Chianti Classico "Occhio di Pernice" by Badia a Coltibuono in the 375ml format is a highly prestigious choice for lovers complex and intense sweet wines, a true oenological treasure that celebrates the art of winemaking according to the most ancient Tuscan traditions.

Winery history
The estate is the former Abbey of San Lorenzo a Coltibuono, whose documented origins date back to the 11th century. Over the centuries the property has maintained its connection to local viticulture; in the twentieth century family management helped consolidate the production of wine and olive oil and opened the Abbey to hospitality and the promotion of Tuscan cuisine.
Production philosophy
It practices organic farming with attention to biodiversity, the soil and workers' health. The wine is conceived as the fruit of vineyard work. In the winery, techniques that respect the integrity of the grapes are favored, such as fermentation with indigenous yeasts and the use of gravity-flow winemaking principles.
Terroir and vineyards
The vineyards are concentrated in the Monti in Chianti area on clay-limestone soils. The vineyards mentioned in the product sheets include crus and parcels such as Montebello, Poggino, Vignone and Argenina; the estate overlooks the Arno valley and includes estate-owned olive groves and woodlands.
