This Single Pot Still Wonder Of Wood Virgin Carpathian Oak from Teeling, presented in a boxed 70 cl bottle, emphasizes the virgin Carpathian oak wood. On the nose there are clear impressions of fresh oak and bark, along with sweet spices, resin hints and a subtle toasted character; fine fruity and citrus touches soften the woody structure. The expression remains restrained, without excess, inviting a slow approach to discern the various olfactory details.

On the palate it shows solid body and present tannins, with a framework that ties together spicy notes and returns of toasted wood; the alcoholic warmth is enveloping but not intrusive. The finish is long and dry, with persistent spice and a memory of bark and bitter honey. It is suited to be enjoyed neat or with a small drop of water to open the aromatic profile; it can accompany dark chocolate or aged cheeses, though portions should remain modest so as not to overpower the character of the spirit.

Irish whiskey producer based in the Liberties district of Dublin. Distillation

Combined use of pot stills (for single pot still expressions) and column stills (for some grain whiskey); some expressions are triple distilled; method varies depending on the bottle.

Ageing

Maturation in a wide range of casks with frequent finishes and double maturations (e.g. bourbon followed by wine casks such as Sauternes, red wine casks; finish in Japanese shochu casks on some releases). Many bottles are bottled without chill filtration and are reduced from cask strength to their house 'signature' ABV.
