It is known that in summer white wine is preferred, not only because it goes perfectly with seafood first and second courses, which are consumed for the most part in the heat, but also because so fresh from the refrigerator they go down that it is a pleasure. So let's start with the serving temperature, which everyone is always wrong for red wine, since there has always been talk of "room temperature". Maybe in winter when we have around 18-20 ° at home it can be right, but in summer with the mercury column at 30 ° it is definitely too hot.


So let's try to put the bottle in the refrigerator for about an hour before uncorking it and you will see that you will taste it very well even in hot weather. If it happens that you have forgotten to put the bottle in the refrigerator, just put it in the basket with ice for 10 minutes. Surely the best place to store wines, and not just to keep it at the right temperature for lunch or dinner, is by far the cellar cabinet. There your favorite labels will keep perfectly at the right temperature always ready to be consumed immediately or stored over time.


Pairing a red wine with a typically summer dish is quite unusual given that, as we have already said, the diet changes with the season and that in summer lighter foods are preferred. Very tannic and full-bodied wines are certainly not the best choice for a summer dinner, however there are many excellent young fruity red wines, which are well suited to this occasion. These are naturally light reds, with a rather low alcohol content, below 12 °. The Italian Sommelier Association recommends serving them at a temperature of 11-13 °. Cooling the drink too much leads to the loss of scents and the bouquet of perfumes.


What makes the difference is the cellar, which raises and forms the berry in the vineyard. There are grapes that are particularly suitable for giving life to young and simple wines, suitable for drinking during the summer. Definitely recommend a Lambrusco di Sorbara from the Soliera winery, a splendid sparkling garnet red wine typical of Emilia Romagna, fresh and perfect for the hot season. Lambrusco is one of the most versatile grape varieties ever. Very delicate balanced body, with a slightly pink and fine froth obtained through a long natural fermentation from Lambrusco di Sorbara grapes. The typical aromas open the nose with fresh fruit, the sparklingness make it a wine suitable for appetizers or sushi.


A wine to uncork alone or in company, in front of a cheerful grilled meat in the garden or on the beach, is the Lacrima Di Morro D'Alba from Cantina Velenosi. Ideal as a light and summer red wine, not too full-bodied, but a good red with an original and characteristic profile given its 100% origin from vineyards of Lacrima di Morro d'Alba. It is a very small grape variety that is grown only in the small district of the municipality of Morro d'Alba. Definitely no longer defining itself as a classic, we also affirm a Rarity! A truly unmistakable wine characterized by mellow floral and fruity aromas, very intense and aromatic. In the glass it has ruby red colors with purple hues. At the sip, it shows fruity characteristics with a soft and persuasive entry.


Another perfect label to be consumed in the summer is the Organic Bardolino from Cantina Gorgo. The most convivial and fresh soul of the Veronese territories produced by the Gorgo house in a red dress. Ruby in the glass, fruity on the nose with notes of cherry, blueberries and currants mixed with hints of spices such as black pepper. Tasting it immediately perceives its youth, the light and fresh flavor, which goes wonderfully with both fish and meat dishes. Full-bodied and highly drinkable.


Frappato Bell’assai from Cantina Donnafugata, is one of the most beautiful and particular varieties of vine in Sicily. Bell'Assai depicts a woman celebrating the fruits of the vine, offering leaves, branches and berries to the wind. This very particular vine, goes incredibly well with both meat and fish dishes, and therefore also suitable for the hottest months. It captures the sense of smell with aromas of rose and violet, mixed with aromas of wild strawberries and raspberries. On the palate it is extremely elegant, savory and fresh. Overall it is a fragrant wine, whose pleasantness is enhanced by the long crunchy persistence of berries.
