Typically, Etna DOC white wines are mainly produced from the Carricante grape, appreciated for its vibrant acidity, mineral notes and aging capacity, often accompanied by Catarratto which enriches its aromatic profile. The Magnum format, which corresponds to two standard 750ml bottles, is ideal not only for sharing occasions but also for better aging potential, allowing the wine to develop complexity and harmony over time.

The winemaking aims to preserve the freshness and intrinsic aromatic qualities of the vines, with fermentation conducted at a controlled temperature to enhance the varietal characteristics and the link with the volcanic territory. The refinement, usually short and in steel, helps to keep the purity of the fruit intact.

At sight, "Di Sei" has a bright straw yellow color, while on the nose the notes of white pulp fruit, citrus fruits, aromatic herbs and that distinctive minerality which speaks directly of the volcanic soil of origin are immediately distinguishable. In the mouth, the wine reveals an extraordinary freshness, supported by a solid acid structure and a palate rich in nuances that vary from fresh fruit to more complex and mineral sensations, with a long and persistent finish.

Winery history
The Costanzo family recovered and restored a historic palmento on the northern slopes of Mount Etna, which they purchased and returned to use in recent years. Today the estate is run by family members assisted by a local technical team. The restoration of the palmento and the acquisition of pre-phylloxera vineyards have guided the estate’s development and a production focused on contrada expressions.
Production philosophy
Enhance the diversity of Etna's contrade through separate vinifications, minimize intervention to preserve the integrity of the fruit, and adopt bio-architecture and sustainability measures in the winery, with selective use of stainless steel, tonneaux and large casks to respect varietal and terroir expression.
Terroir and vineyards
Located in Contrada Santo Spirito, in the Passopisciaro area. Terraced vineyards on volcanic soils, gobelet-trained and supported by dry-stone walls of lava rock, situated mainly between 600 and 800 meters above sea level.
