The Moscato vineyards are grown in Moncucco at an altitude of 200 meters above sea level; the vinification involves a soft pressing of the whole bunch with a Marmonnier press, initial fermentation in steel at a controlled temperature and refermentation in the bottle. Refine at least 12 months sur lies.
It has a plum-yellow color with moss green hues. The olfactory profile denotes a complex aroma given by the Moscato grape, a fruity bouquet of pear, apple and citron peel, combined with sweetish hints of sponge cake and notes of chinotto, which are combined with floral aromas of orange, rose, geranium, lemongrass and lily of the valley. The perlage is the classic of sparkling wine and also the fatness, with the unmistakable taste of the Moscato grape which will not vary over the years, and will always have a long and aromatic persistence.
The recommended pairing is with desserts, in particular it goes well with apple or pear tarts, but also excellent cheesecakes.
