The acquisition of Château de Fontaine-Audon allowed the winery to have access to one of the few monopolies in Sancerre, with vineyards located in a single estate that guarantees grapes of exceptional quality and unique characteristics.
The vinification of "Château de Fontaine-Audon" follows a meticulous approach, aimed at preserving the freshness and aroma of Sauvignon Blanc. The grapes, harvested by hand at the optimal moment of ripeness, undergo delicate pressing, followed by low-temperature fermentation in stainless steel tanks. This process helps keep the varietal aromas and natural freshness of the wine intact, resulting in a Sancerre of remarkable purity and expressiveness.
Visually, the wine has a light straw yellow color, with greenish reflections that underline its youth and freshness.
