To drink a good Spumante it is not necessary to always focus on the most famous bubbles of Franciacorta, a Spumante DOC is also produced in Romagna: the Novebolle!
This wine was born between the end of the 19th century and the beginning of the 20th century near the tower of Villa Torlonia in San Mauro Pascoli, originally called "Champagne Latour". With the arrival of the law that prohibited the use of foreign terms, its name was changed, which resulted in the loss of its prestige and its rapid decline. In 2018 the first bottles are reborn; the oenologists have studied and created a 95% Trebbiano base with a remaining 5% of Famoso grapes, with the Martinotti sparkling method and slow refermentation in an autoclave at a temperature between 15 ° -17 ° C for about 30 days.
Romagna DOC Spumante has risen thanks to the great commitment of the Consorzio Vini di Romagna which represents the wineries of the territory and the main groups: “Nove” like the Romagna hills and “Bolle” like the bubbles that characterize it.
A sparkling wine of great quality, youthful and joyful. Perfect for aperitifs but also for the whole meal, passing from fish-based dishes to grilled meat dishes.
