The name of this wine is inspired by the historic Sirolo quarry, located on Monte Conero.
The free-run must, rich in primary aromas, completes its fermentation at a controlled temperature to preserve its complexity. The wine undergoes a period of aging of 6 months in stainless steel and subsequent 6 months in the bottle before being introduced onto the market.
The result is a wine with a straw yellow colour. Its aroma, typical of Chardonnay, reveals enveloping notes of tropical fruit. On the palate, it manifests itself with a pleasant corpulence, accompanied by a mineral and vibrant character, enriched by citrus and savory tones.
This wine is an ideal companion for fish-based dishes, such as white seafood ragout, seared sardines and baked turbot seasoned with olives and potatoes.
