From the last existing Williams pear orchards in South Tyrol in the municipalities of Egna and Ora, they are harvested as late as possible, in order to have a slight over-ripening, the carefully selected fruits necessary for the production of this splendid brandy.
The pears are reduced to a pulp with the appropriate machinery, then selected yeasts are added to facilitate fermentation; in the period between 4 and 6 days the sugar is transformed into alcohol. Fermentation takes place in stainless steel tanks while a modern discontinuous bain-marie alembic is used for distillation. About six months after distillation, it is bottled after adjusting the product with spring water until it reaches 46° and subsequent filtration at -2/0°C.
The result is an exceptional crystalline white brandy that explodes on the nose with sweet aromas of pears that also conquer the palate from the first sip.
