First-pressed wine obtained with a soft pressing through mechanically regulated presses. Pumping is avoided by decanting only by gravity in order to avoid oxidation. Very low use of sulfur dioxide (less than 30 mg/l). Natural decantation and an alcoholic fermentation lasts about two weeks at low temperature. The malolactic fermentation then following the natural fermentation, as for each Champagne of the Maison, is done naturally and completely.
The result thus obtained is assembled for 10% of the wine aged in oak barrels for a year and after bottling it is aged for 5 years in the bottle.
A splendid drink of Champagne for a Maison that started everything from here. From the most basic Champagne but also with more history, to then move on to the great Crus and great vintage selections. But the fact remains that this is undoubtedly a sip of history for Champagne.
Splendid golden colors with sometimes coppery reflections.
Nose: fine and delicate with aromas of wild berries and citrus fruits
Mouth: powerful wine with notes of dried and ripe fruit, a spicy hint with a fresh finish.
