In the heart of the Cilento National Park, in a unique and rich terroir, where the rolling hills and promontories overlook the sea, the San Salvatore 1988 farm is born. In the shadow of the temples of Paestum in Cannito, at an altitude 137 meters above sea level from a superb indigenous grape variety of Aglianico in purity, this elegant sparkling Brut rose 'vintage GIOÌ is born. This great Campanian vine gives us wines with great elegance and personality, characteristics that develop thanks to the composition of the soil, which is a clayey colluvium rich in skeleton.
The characteristic production area with a typically Mediterranean climate positively influences the vegetative cycle of the vineyards that are grown in espalier with guyot pruning. Pruning is done manually, and as per tradition, the shoots are tied with small twigs of willows. When the bunches of grapes are close to ripeness, defoliation is carried out, which has the main purpose of ensuring the ventilation and health of the grapes during the final phase. Subsequent thinning is a further green pruning that allows the balance between bunches and vegetation, those in excess are eliminated and there will be a qualitatively better production as regards sugars, acids and polyphenols.
The vinification involves a soft pressing without maceration, a fermentation in stainless steel tanks at a controlled temperature, followed by aging for 24 months in the bottle with yeasts, and three months after disgorgement. The residual sugar is less than 15g / L.
This elegant rosé sparkling wine produced from the most important red berried grapes in the area, has a bright pale pink color of the Provencal type that is very pleasing to the eye. On the nose it conquers with its sumptuous bouquet that recalls the branches filled with lots of good ripe fruit, and floral hints of lily of the valley and wisteria. But also aromas of pastry and freshly baked bread crust that hovers early in the morning, as well as undergrowth and spicy nuances.
During the tasting phase it conquers for its creaminess, the dry and refreshing sip becomes captivating and lively at the same time, on the palate it is savory and juicy, with a refined and satisfying silhouette. The persistent duration of the soft but compact crown of foam is long and perfect, the dancing perlage is perfect with tiny and lasting bubbles.
All the traits of a classic sparkling wine excellent as an aperitif, to be tried also with sashimi, sushi and risotto alla marinara, excellent with white meats, buffalo mozzarella and fresh cheeses, it goes very well at dessert time even with a cheese cake.
