The Valpolicella Classico Superiore DOC 'Rafaèl' produced by the renowned Tommasi winery elegantly expresses the winemaking tradition of Valpolicella, a wine region that unfolds its magic in the Veronese hinterland. This wine is crafted through a careful selection of the region's native grapes, primarily including Corvina, Rondinella, and Molinara.
The vinification of 'Rafaèl' follows the traditional method for Valpolicella Classico Superiore, with a brief fermentation of the grapes followed by a minimum aging of 15 months in large oak barrels, which helps develop the complexity of its bouquet and perfectly integrates the fruit aromas with woody notes.
Visually, the wine presents an intense and captivating ruby-red color. On the nose, 'Rafaèl' offers a wide aromatic spectrum that enchants with scents of cherry, plum, and spices, enriched by a light vein of tobacco and vanilla from the oak wood. On the palate, the wine is robust yet balanced, endowed with good acidity and soft tannins that lead to a persistent and harmonious finish.
This Valpolicella Classico Superiore is ideal for serving with Italian cuisine dishes, such as mushroom risottos or red meats. Its structure and intensity also make it suitable for extended aging, which will allow the wine to evolve and express further nuances of flavor.
The Tommasi winery, a family-owned viniculture business deeply dedicated to excellence and respect for traditions, ensures meticulous attention to every stage of the production process, guaranteeing that each bottle of 'Rafaèl' faithfully represents the terroir and winemaking art of Valpolicella.
