Tondina is a very fine organic extra virgin olive oil produced in Saracena, in the province of Cosenza, in the Pollino national park, in very limited quantities. A unique oil of its kind that comes from a family with 50 years of experience, with 100% Tondina olives. The label shows the reproduction of a work by a well-known artist from Saracena: Francesco Gagliardi.
Freshly picked olives have always been immediately processed in the mill, first defoliated and then washed. Afterwards the pressing and the subsequent kneading begins by means of a constant control of the temperatures which in this case must not exceed 22 ° C; finally, the oil extraction is carried out first with a centrifuge placed horizontally to finish with a vertical separator. The precious liquid green gold is immediately placed under nitrogen in stainless steel postures where it decants for a short period before being packaged.
Green in color with golden hues, Tondina extra virgin olive oil offers very pleasant complex and intense notes of apple, hints of almond, artichoke, and scents of lime and mint to the nose. The flavor is decided at the right point, with a bitterness and spiciness that is not excessive.
Excellent for embellishing important meat and fish dishes, as well as being exceptional for dressing salads and vegetables raw.
