After a strictly manual harvest, the bunches are transported in boxes to the rooms dedicated to winemaking at the Podere Sapaio winery, where they are destemmed. The must, obtained by pressing the grapes, ferments at a controlled temperature in steel tanks, with a long maceration on the skins. Maturation, lasting a total of 14 months, takes place both in barriques and French tonneaux.

The Bolgheri Rosso "Volpolo" presents itself visually with a classic ruby ​​color. Sensations of small berries emerge on the nose, enriched by spicier notes that reveal themselves on the finish. On the palate, the wine is full-bodied, broad and enveloping, with a sip that highlights savory and fresh veins, making the tasting experience a real pleasure.

This label represents one of the most interesting production realities in the Bolgheri area of the last twenty years, obtaining the appreciation of both national and international critics.

Winery history
The project began when Massimo Piccin purchased the estate in Lo Scopaio and launched the winemaking project in 1999. The initial plantings and first production took shape in the early 2000s; since 2004 the winery has produced its two main labels, Sapaio and Volpolo. Over time the estate has developed while maintaining a strong connection to the Bolgheri area and a strategy focused on a small range of wines with a distinct identity.
Production philosophy
Sapaio favors a contemporary approach that seeks to express the terroir through Bordeaux varieties. The estate emphasizes experimentation, a balance between human activity and the environment, and the use of time as a resource for ageing, with the aim of producing powerful yet elegant and long-lived wines.
Terroir and vineyards
The vineyards and winery are located in the Costa degli Etruschi, in the Bolgheri area and nearby zones such as Bibbona — a setting characterized by proximity to the sea, maritime winds and alluvial/Quaternary soils that enhance the expression of Bordeaux varieties.
