Modena DOC Pignoletto Ancestrale by Francesco Bellei is a sparkling wine that captures the essence and tradition of Modena viticulture, offering a unique interpretation of the Pignoletto grape. This ancestral method, also known as the rural or fund method, stands out for the natural fermentation of the wine directly in the bottle, without the addition of yeasts or sugars, allowing Pignoletto to fully express its varietal characteristics and complexity.

The Francesco Bellei winery, renowned for its ability in the production of sparkling wines and for its attention to quality and sustainability, presents with this Pignoletto Ancestrale a fresh, lively drink full of personality. The choice to follow the ancestral method testifies to the respect for traditional techniques and the commitment to valorising native vines.

Visually, Pignoletto Ancestrale has a straw yellow color, sometimes accompanied by a slight cloudiness due to the presence of yeasts in the bottle, a distinctive characteristic that contributes to the aromatic richness of the wine. On the nose, an intense and fruity bouquet emerges, with notes of green apple, pear, citrus fruits and white flowers, enriched by nuances of yeast and fresh bread, which add depth and complexity.

In the mouth, the wine is fresh, with a balanced acidity that supports the structure and gives dynamism to the sip. The presence of yeast residue in the bottle gives Pignoletto Ancestrale a unique texture and a light creaminess, which is combined with a clean and persistent finish, characterized by a pleasant minerality.

Ideal as an aperitif or paired with light appetizers, fish and seafood dishes, Modena DOC Pignoletto Ancestrale by Francesco Bellei is also an excellent companion for regional Emilian cuisine, where the freshness and liveliness of the wine can enhance the authentic flavors of local products.

With his Pignoletto Ancestrale, Francesco Bellei offers a wine that is an expression of the richness and diversity of the Modena area, demonstrating how loyalty to traditions and innovation can coexist harmoniously in the production of high quality sparkling wines.
