Ononide comes from white grapes grown on the farm, whose vineyards are located in Brisighella (RA), on clayey soil with permanent grassing at an altitude of about 120-150 meters above sea level, with a Guyot training system. For its production, we proceed with a light pressing to extract the native yeasts present on the bunches, with a fermentation in the bottle through a natural process. With the fermentation method used by our "Ancestral" ancestors, sparkling and sparkling wines are produced. At that time it was the wine that dictated the natural times, instead of modern technologies, and Mastro di Baglio with "Ononide" wanted to make a leap in the past, to return to having that authentic, unique and natural flavour.
The harvest is done manually in several steps from early to mid-September. The vinification takes place in white with separation of the skins, soft pressing, fermentation in steel at controlled temperature, and refermentation in the bottle from the end of February, with integration of virgin must.
When poured, it shows a straw yellow color, which after stirring becomes "turbid as fog" due to the suspended yeasts. Citrus hints of cedar and pink grapefruit arrive on the nose. The sip is pleasant, particularly fresh, and offers a citrus aftertaste very pleasant on the palate.
Excellent aperitif wine in combination with delicate cheeses. There are two ways to use it: do not shake the bottle to have a dry and elegant sparkling wine, or shake it when opening for a more structured sparkling wine, due to the yeasts put into circulation.
