Chardonnay and Pinot noir are vinified in white in the press, with soft pressing of the whole grapes, followed by separation of the fractions. The Pinot Noir must macerates for about 6 hours, then it is combined with the Chardonnay. Fermented in stainless steel tanks at controlled temperature with selected yeasts, and lowering of temperature to avoid malolactic fermentation. After the addition of the "draught syrup" it is bottled and closed with a crown cap, and laid down for the second fermentation, for an aging of approximately 36 months.

In the glass it shows off a beautiful classic color, ranging from coral to soft salmon, the perlage is bubbly, abundant and continuous. At a first olfactory examination the maceration is clearly perceived, it clearly expresses the fruity scents of cherries, plums and wild dark berry fruits such as mulberry and blueberries. They are accompanied by typical hints of vegetables, spices, bark and musky notes, in a fresher and more citrusy finish. The sip is perfectly balanced between sapidity, acidity and the enveloping alcohol content, on the finish it reinforces the note of red fruit and the spicy charge, with a veil of licorice.

A structured and generous wine, very versatile, capable of excellently accompanying countless meat and fish preparations, from aperitifs to main courses.

Managed by the Biatta family, it combines modern technical practices with artisanal care in production; it has significant production and vineyards distributed throughout the Franciacorta area.

Winery history
The winery was born from the commitment of the Biatta family: family patriarch Giovanni Biatta purchased the first vineyards in 1985 and since then the estate has grown, blending family tradition with entrepreneurial development. Over the years management has expanded to include the new generations and to enlarge the winemaking and hospitality facilities.
Production philosophy
Pursuit of quality and full control of the production process: Le Marchesine aims to enhance the Franciacorta area through integrated management practices, selective harvesting and in-house winemaking. The company combines artisanal care with modern technologies, also dedicating spaces to hospitality and events.
Terroir and vineyards
Based in Passirano, with vineyards spread across the heart of the Franciacorta area; some labels come from single vineyards such as Colle La Santissima in Gussago, while other vineyards are located in municipalities such as Paderno Franciacorta, Rodengo Saiano, Erbusco and Cologne.
Awards and recognitions
The winery has received recognition for several wines: Secolo Novo 2005 was awarded 5 Grappoli AIS and received mentions from Gambero Rosso; Franciacorta Blanc de Blancs 2005 was awarded the Rosa Camuna by Viniplus; and the Rosé 2006 received medals from Club 90 and Gilbert & Gaillard.
