Taif is a great demonstration of how a great aromatic vine like Zibibbo, usually associated with sweet wines, is instead capable of making excellent dry whites that are perfect throughout the meal. The Zibibbo grapes used come from the company's vineyards grown on slight hills in Western Sicily at an altitude of about 300 m a.s.l. The harvest takes place towards the end of August; the bunches, carefully selected during the harvest, are quickly taken to the cellar and sent for fermentation which, as for the subsequent refinement, takes place in stainless steel. Before being put on the market, the wine ages for a further 6 months in the bottle.
When poured, it has a beautiful straw yellow color with greenish reflections. Of great freshness and aroma, Taif has a broad olfactory profile that ranges from fruity aromas of peach and mandarin to herbaceous aromas of sage, on the finish it opens to floral scents of wisteria and rose. In the mouth, the taste is warm, a sip that gives a perfectly balanced sensation of freshness and light acidity, which accompanies to a persistent and pleasantly floral finish.
It goes perfectly with all seafood dishes from appetizers, fried dishes and shellfish.
