The Brut is characterized by a refined balance between freshness and complexity, achieved through the secondary fermentation according to the traditional classic method, which enhances the intensity and finesse of the aromas.

On the nose, elegant hints of green apple, bread crust, and yeast emerge, accompanied by delicate floral notes. Winery history
Founded by Francesco Bellei and developed by the Bellei family, the estate introduced in-bottle sparkling winemaking techniques as early as the 1970s, applying the Traditional Method to local grape varieties. Management later passed to the Cavicchioli family, who continued the tradition while also experimenting with ancestral methods and amphora fermentations.
Production philosophy
Production focused on quality and respect for the terroir: enhancing local grapes and integrating international varieties through traditional methods and experimental approaches.
Terroir and vineyards
The vineyards and production are located in the area between the Secchia and Panaro rivers, in the municipalities of Bomporto and San Prospero in the province of Modena. The wines express the characteristics of the Modena foothills and their native grape varieties.
