The Etna DOC Bianco "Contrada Cavaliere" by Palmento Costanzo is a pure and refined expression of native Sicilian grapes, grown on the unique slopes of the Etna volcano. This white wine highlights the Carricante grape variety, celebrated for its ability to faithfully convey the minerality and complexity of the volcanic soil from which it comes.

Palmento Costanzo, located in the heart of the Etna wine area, practices agriculture that respects the environment and the territory, focusing on careful management of the vineyards to enhance the unique characteristics of each district. The "Contrada Cavaliere", in particular, is known for its soil rich in lava stone and for the optimal climatic conditions which favor the production of white wines with high acidity and aromatic depth.

The winemaking process is aimed at preserving the freshness and integrity of the fruit, with delicate fermentation in stainless steel containers to keep the varietal characteristics of Carricante unaltered. A short period of maturation on the yeasts follows to enrich the wine with nuances and complexity without overpowering its natural expressiveness.

At sight, the "Contrada Cavaliere" presents itself with a light straw yellow color, a sign of youth and freshness. On the nose, the wine unfolds a wide range of aromas, with dominant notes of white pulp fruit, such as peach and pear, enriched by accents of aromatic herbs, white flowers and a marked minerality that recalls lava stone and sea salt. These olfactory characteristics reflect the influence of the volcanic terroir and the purity of Etna's environment.

In the mouth, the Etna DOC Bianco "Contrada Cavaliere" is vibrant and well-structured, with a lively acidity that balances the aromatic richness and guarantees a pleasant persistence. Winery history
The Costanzo family recovered and restored a historic palmento on the northern slopes of Mount Etna, which they purchased and returned to use in recent years. Today the estate is run by family members assisted by a local technical team. The restoration of the palmento and the acquisition of pre-phylloxera vineyards have guided the estate’s development and a production focused on contrada expressions.
Production philosophy
Enhance the diversity of Etna's contrade through separate vinifications, minimize intervention to preserve the integrity of the fruit, and adopt bio-architecture and sustainability measures in the winery, with selective use of stainless steel, tonneaux and large casks to respect varietal and terroir expression.
Terroir and vineyards
Located in Contrada Santo Spirito, in the Passopisciaro area. Terraced vineyards on volcanic soils, gobelet-trained and supported by dry-stone walls of lava rock, situated mainly between 600 and 800 meters above sea level.
