Alipus Santa Ana Mezcal is an authentic expression of the rich Mexican tradition in mezcal production. Originating from the Oaxaca region, this distillate is made using artisanal methods passed down through generations, emphasizing the deep connection between local producers and their lands.
The production of Alipus Santa Ana Mezcal begins with the careful selection of Espadín agave plants, which are harvested at full maturity after approximately eight years of growth in the sunny valleys of Santa Ana del Rio. The agaves are then cooked in underground pits, where they acquire the smoky notes that are distinctive characteristics of mezcal. After cooking, the agave is ground, and the resulting must is naturally fermented with wild yeasts.
Distillation occurs in copper stills, a process that enhances the purity and complexity of the distillate’s aromatic profile. The result is a clear mezcal, with deep smoky notes balanced by nuances of ripe fruit and a subtle earthy aftertaste. The finish is long and elegant, with an explosion of flavors that lingers on the palate, evoking the land from which it comes.
