The Primitivo IGT Salento "Sé" from Gianfranco Fino winery is one of the highest expressions of this native grape variety from Puglia. This wine is the result of a rigorous selection of grapes, manually harvested in the most suitable areas of Salento, where the Mediterranean climate and clay soil give the grapes an intense maturation rich in aromas.
On the nose, "Sé" presents a deep and complex bouquet, dominated by notes of ripe red fruits like plums and sour cherries, beautifully integrated with nuances of sweet spices, vanilla, and a slight touch of tobacco and chocolate, resulting from aging in French oak barriques.
On the palate, the wine expresses extraordinary intensity and richness, with robust tannins elegantly woven into a velvety texture that covers the palate. The balance between acidity and alcohol is well calibrated, leading to a long and persistent finish that leaves memories of black berry fruit and a pleasant aftertaste of espresso coffee.
This wine is perfect to accompany robust and flavorful dishes such as roasted red meats, game, and aged cheeses. Its structure and complexity also make it an excellent candidate for prolonged aging, allowing it to evolve elegantly in the cellar for several years.
We recommend serving the Primitivo IGT Salento "Sé" by Gianfranco Fino at a temperature of about 18-20°C to fully appreciate its aromatic range and complexity in the mouth.
