Insoglio del Cinghiale is an extra virgin olive oil that elegantly tells the story of Tuscany, a region renowned for its excellent olive-growing tradition. Produced by Campo di Sasso, this 375 ml bottle captures the soul of the territory, with olives coming from selected olive groves that best express the peculiarities of the Mediterranean climate and the mineral-rich hilly soils.

The processing method is rigorous and traditional, aimed at preserving the fresh and fruity aromas of freshly harvested olives. On the nose, herbaceous hints emerge, with light notes of artichoke and almond, while on the palate it reveals itself to be smooth, balanced, and with a pleasant touch of bitterness and spiciness, a sign of a quality cold pressing. This oil is perfect to enhance simple or elaborate dishes, from salad to bruschetta, to meats and cheeses, accompanying every dish with refinement and character.

Winery located in the western part of Alta Maremma, in Bibbona (Tuscany). It is part of the project associated with Tenuta di Biserno and produces the Toscana IGT wines known as Insoglio del Cinghiale, as well as white and rosé wines.

Winery history
The Campo di Sasso project is closely linked to the Antinori family and to the development of Tenuta di Biserno. The estate originated from the identification of vineyards in the Bibbona/Bolgheri area and the development of vineyards across several parcels; over time production has expanded to include, in addition to the historic red wine, white and rosé wines tied to the same territory.
Production philosophy
The stated objective is to express the marine, sandy character of Alta Maremma through Bordeaux-style blends and Mediterranean varieties, prioritizing drinkability and balance. The winery emphasizes the relationship between parcels, sandy soils and the coastal climate to produce wines that are recognizable and true to the terroir.
Terroir and vineyards
The vineyards are located in Bibbona, in the western part of the Tuscan Maremma, close to the Tyrrhenian coast and near Bolgheri. The soil is predominantly sandy, with a moderating maritime influence; the vineyards are planted in several low-altitude parcels.
