The Etna DOC Bianco "Di Sei" in Jeroboam format, presented in an elegant wooden case by Palmento Costanzo, is a wine that exemplifies the uniqueness and excellence of wine production on Etna. "Di Sei", which translated means "of six" in Italian, could refer to different aspects of the wine, such as a blend of six varieties or a reference to particular viticultural or winemaking practices; without specific details, interpretation may vary. However, it is clear that this wine represents a prestigious offering from the winery, highlighted not only by the quality of the product but also by the presentation in Jeroboam format (equivalent to four standard 750ml bottles) and the wooden case.

Located on the volcanic slopes of Etna, Palmento Costanzo is renowned for its wines that capture the essence of the region's unique volcanic terroir. The combination of mineral-rich soils, the altitude and the specific microclimate of Etna contribute to creating white wines of notable complexity, freshness and aging capacity.

Etna DOC white wines are usually dominated by Carricante, an indigenous grape variety that stands out for its vibrant acidity and mineral notes, often accompanied by Catarratto and other local varieties that add complexity and depth to the blend. The winemaking aims to preserve these distinctive characteristics, with temperature-controlled fermentation in stainless steel to maintain the freshness and aromatic expression of the vines.

Visually, a wine like "Di Sei" will present itself with a straw yellow color, potentially with greenish reflections that signal its youth and liveliness. On the nose, you can expect a wide range of aromas: white-fleshed fruit, citrus notes, wildflowers and a marked minerality that reflects the volcanic soil.

In the mouth, "Di Sei" should offer an impeccable balance between aromatic richness and acidic freshness, with a penetrating minerality leading to a long and persistent finish. The complexity and structure of this wine make it suitable for a wide variety of gastronomic combinations, from seafood cuisine to dishes based on vegetables and fresh cheeses.

Presented in a wooden case, the "Di Sei" Jeroboam by Palmento Costanzo is an excellent choice for special occasions, celebrations or as a prestigious gift. Its presentation highlights the value and uniqueness of the wine, making it a collector's item for enthusiasts and a symbol of sharing and celebration.

Winery history
The Costanzo family recovered and restored a historic palmento on the northern slopes of Mount Etna, which they purchased and returned to use in recent years. Today the estate is run by family members assisted by a local technical team. The restoration of the palmento and the acquisition of pre-phylloxera vineyards have guided the estate’s development and a production focused on contrada expressions.
Production philosophy
Enhance the diversity of Etna's contrade through separate vinifications, minimize intervention to preserve the integrity of the fruit, and adopt bio-architecture and sustainability measures in the winery, with selective use of stainless steel, tonneaux and large casks to respect varietal and terroir expression.
Terroir and vineyards
Located in Contrada Santo Spirito, in the Passopisciaro area. Terraced vineyards on volcanic soils, gobelet-trained and supported by dry-stone walls of lava rock, situated mainly between 600 and 800 meters above sea level.
