Winery history Castello della Sala

The estate has medieval origins: the castle was built in the 14th century by the Monaldeschi della Vipera family. After changes of ownership and long periods of transformation, the estate entered the Antinori sphere in the 20th century. From the 1980s a modern winemaking project began, leading to the creation of Cervaro della Sala and the development of varietal experiments and barrique aging techniques.

Production philosophy

To combine the territorial identity of Umbrian native varieties with international varieties and modern winemaking practices: the stated aim is to highlight the freshness and typicity of the region with wines capable of evolving over time, maintaining a balance between a contemporary winery and the historic ageing cellars.

Terroir and vineyards

The estate is located in Umbria, a short distance from the border with Tuscany and about 18 km from Orvieto. The area is characterized by calcareous-clay soils rich in fossils, well-exposed vineyards and significant diurnal temperature variations; the estate's vineyards are situated between 220 and 470 meters above sea level.
