Winery Domaine d'Aussières

Estate with ancient roots. After a period of abandonment, the property was acquired by the Domaines Barons de Rothschild group at the end of the 1990s and underwent an extensive programme of rehabilitation and replanting aimed at enhancing the quality of the vineyards and the winemaking.

Environmentally focused practices and biodiversity conservation: management of garrigue landscapes, protection of natural areas and a transition to sustainable practices; sources also indicate the estate is moving toward organic certification.

Located in the Languedoc, near the Massif de Fontfroide and the Corbières area; vineyards benefit from a relatively cool microclimate compared with the surrounding plain, with varied soils and the presence of garrigue that influences the grapes' aromas.
