Production method

Traditional distillation using discontinuous pot stills (bain-marie), use of copper pot stills and careful separation of heads and tails; stainless steel tanks are used for fermentations in preparatory phases when necessary. The method is applied to pomace (for grappa) as well as to wine, fruit and botanicals.

Discontinuous pot stills heated by bain-marie (copper pot stills) with separate management of distillate fractions; traditional practices combined with modern technologies to preserve aromas.

Ageing

Producer history Bruno Pilzer

The business originated from Vincenzo Pilzer's idea in the late 1950s; the family operation has grown over time and is now carried on by the second generation, with Bruno (and his brother Ivano) involved in management and product development. The facility was moved and reorganised in Portegnac (a hamlet of Faver, Val di Cembra) with new equipment in the 2000s, maintaining a strong connection to the Trentino territory.
