Artisanal processing that combines slow cooking of the piñas in earth ovens, natural fermentation in wooden vats and copper distillation for the artisanal lines. For the ancestral range small stills are used with clay amphorae/pots at the base and an upper wooden chamber (Filipino style), with condensation via a bamboo tube.
