Traditional processes: maceration of raw materials followed by pot still distillation to extract the desired aromatic fraction, then final blending. For particular products (e.g. Coca Buton) specific phases of leaf maceration, distillation and selection of the heart of the distillate are described.

Distillation

Maceration of raw materials and distillation in a traditional pot still; selection of the central fraction of the distillate (heart) and final blending.

Producer history Buton

Founded in Bologna in 1820 by Jean Bouton (Italianization of Jean Bouton/Bouton), the house grew as Distilleria Giovanni Buton, gradually developing a range of brands and liqueurs (including Vecchia Romagna, Coca Buton, Maraschino, Rosso Antico). In the 20th century the Sassoli de' Bianchi family led the company; after changes of ownership the brand entered the Montenegro Group portfolio at the end of the 1990s. Traditionally production and facilities were concentrated in the Bologna area; distillation and ageing of spirits have historically taken place in plants in the province of Bologna, with current production sites in the San Lazzaro di Savena area.

Production philosophy

To enhance traditional recipes and Italian liqueur heritage, preserving historical processes such as maceration, pot still distillation and blending to achieve liqueurs with an aromatic profile faithful to the original recipe.
