Cacao Éthique

Explore the spirits, production style and story of Cacao Éthique.

Cacao Éthique is a gin label from the Japanese group The Ethical Spirits & Co. It is a gin born from the reuse of by-products: it uses a shochu made from sake-kasu (lees) as its base and places cacao husk—the waste from cocoa processing—as its principal botanical, accompanied by juniper.

Distillation and production

Production method

The gin is produced by returning a shochu made from sake-kasu (provided as raw material) to distillation and distilling/infusing cacao husk as the main botanical together with juniper. The recipe favors the use of industrial waste ingredients that are carefully selected and treated to extract their aromas.

Distillation

Re-distillation of a shochu made from sake-kasu to obtain the alcohol base; distillation of cacao husks as a botanical (only juniper + cacao husk in the Cacao Éthique version).

Producer history Cacao Éthique

Cacao Éthique was presented by The Ethical Spirits & Co. as part of the ÉTHIQUE collection and officially launched during the Valentine's Day campaign (announced 29 January 2021). The product stems from the company's project to valorize materials normally discarded (such as cacao husk and sake-kasu) by integrating them into gin production.

Production philosophy

The brand follows Ethical Spirits' philosophy: to value 'hidden gems'—by-products and underused materials—transforming them into leading ingredients. The approach emphasizes upcycling and the creation of spirits with innovative aromatic profiles, putting ethics and circularity at the center of production.

Territory

Produced in Japan; alcohol base obtained from a shochu made from sake-kasu produced in Akita (Hiraizumi). The cacao husks used are supplied by Whosecacao (producer origin indicated as supplier). The brand's operations are linked to Tokyo (Tokyo Riverside Distillery / HQ in Taito-ku, Tokyo).

Awards and recognitions

World Gin Awards — Silver (national category) 2022; IWSC — Bronze 2022; mention/medal World Gin Awards (Silver) in subsequent editions as reported in announcements and competition sheets.
