Production method

Distillation of wine from Airén grapes to obtain the 'holandas', maturation management via the Solera & Criadera system (multiple criaderas and a solera), ageing in American oak casks previously seasoned with Oloroso and Pedro Ximénez wines. For the Angêlus liqueur, macerations of citrus peels/essences and spices are carried out followed by ageing in sherry casks; some stages mention the use of the traditional Bain‑Marie process.

Distillation

Production of holandas from Airén wine; distillation in (copper) stills and management of fractions at 42° for entry into the criaderas; for Angêlus the use of the Bain‑Marie method is reported for processing aromatic materials.
