Production method
Integrated production at the Hacienda: Blue Weber agave grown in the fields of Guanajuato, traditional cooking in stone or clay ovens (with possible integration via autoclave), resting after cooking, juice extraction, fermentation and double distillation. Bottling and bottle manufacturing take place on site; labels are applied by hand.
Distillation
Double distillation according to the Charentais method; use of a combination of columns and copper pot stills.
Ageing
Aging in oak barrels; durations vary by expression (e.g. Reposado about 4 months; Añejo and special expressions up to 12–36 months; 99,000 Horas indicated on some expressions at 18 months).
