Production method

Base spirit produced from Midwest corn; a five-distillation process overall: initial distillations are carried out in column stills to obtain the neutral base, then the final distillation is done in a copper pot still with botanicals macerated in the spirit prior to the cut. Heads and tails are discarded and only the heart is collected.

The No. 209 name references the original license issued in 1882 to a distillery founded in St. Helena (Napa Valley). The modern incarnation of the distillery was re-established in the early 2000s and production now takes place at a facility on Pier 50 in San Francisco. In November 2018 Vintage Wine Estates acquired the brand and inventory, consolidating production of the classic expressions and barrel-reserve variants. Recurring names in the recent history include Leslie Rudd (company steward) and master distiller Arne Hillesland.
