Distillation and production

Production method

Small-batch production using copper pot stills; the declared process involves distillation to proof without adding sugars or preservatives. For some labels the 'Mosto Verde' technique (distillation of partially fermented must) is used. Use of mountain water and gentle grape transport systems to minimize stress are also reported.

Distillation

Traditional copper pot stills; distillation to proof; 1–2 passes depending on the label; Mosto Verde technique for the corresponding versions.

Ageing

Generally unaged (most labels are bottled without wood ageing).

Producer history Fontana

The brand began as a family initiative tied to the Fontana family's passion for pisco. According to published information, Cesar Fontana started small-scale production in the early 2000s; the first distillates were produced around 2005 and in subsequent years production was turned into a commercial activity. Some sources indicate that production is linked to the company Chilca Vid S.A.C., authorized to use the Pisco denomination of origin.

Production philosophy

Artisanal production and close attention to raw materials: grape selection, careful management of winemaking and distillation in small batches to preserve the varietal and aromatic characteristics of the pisco.
