Production method

For products like Maraschino: infusion of marasca cherries in larch wood vats (with some leaves and twigs) for an extended period, followed by distillation of the liquid and solid parts in copper pot stills in batch mode with separation of fractions and maturation of the middle fraction in wooden vats; finally a water/sugar syrup is added to transform the distillate into a liqueur. Other products (sambuca, aperitifs, bitter) are produced by infusion of herbs and spices and, when specified, subsequent distillation or maturation in wooden vats.

Distillation

Distillation in copper pot stills (batch) with separation of heads, heart and tails; for some specialties both the liquid phase and the solids are distilled after infusion.

Ageing

Maturation in wooden vats/tanks (for Maraschino in ash vats; for some products in oak vats according to the product recipe).

The company was founded by Girolamo Luxardo with the opening of the business in Zara (Zadar) in 1821. After damage and losses during World War II, production was re-established in Italy in the postwar period: the current production site is in Torreglia, in the Colli Euganei (province of Padua). The Luxardo family has maintained management and the historic Maraschino recipe, which remains the company's signature product.
