Production method

For the Crème de Cassis the Maison uses maceration of the berries in alcohol (infusion) for at least six weeks to obtain the primary infusion and a second maceration for the 'recharge'. This is followed by 'sucrage à froid' (cold addition of sugar) — a historic Maison technique that avoids cooking the sugar and prevents confiturage.

Not distilled for the Crème de Cassis: maceration/infusion of the berries in alcohol followed by sucrage à froid.

The trading house now known as L'Héritier-Guyot was founded in Dijon in the 19th century. According to the Maison's official history, the business was started by Louis-Baptiste L'Héritier in 1845; following his marriage to Mademoiselle Guyot the company adopted the name L'Héritier-Guyot. Over time the Maison has established itself as one of the leading producers of Dijon fruit creams.
