Production method
Traditional two-day process: botanicals are treated with a maceration phase followed by copper distillation; for particular products (e.g. Sloe) a period of fruit maceration is carried out before bottling.

Ageing
Generally no ageing required for London Dry and Old Tom (Old Tom is richer with a slight sweetness); for Sloe Gin the fruit is macerated for several months before bottling.
