Production method

Selected Ugni Blanc grapes from the chateau vineyards; fermentation using a controlled-temperature double-yeast process (method patented in China); combined distillation in traditional Charentais pot stills and columns, with fraction separation to collect the middle cut (the 'heart'); aging in Limousin oak casks for declared minimum periods (e.g. 6, 10, 15 years depending on the label).

Distillation

Charentais-style distillation using traditional copper pot stills and column stills; separation of heads, heart and tails to select the heart of the distillate.

Ageing

Maturation in Limousin oak casks (France) in dedicated cellars; declared minimum aging periods are applied (e.g. minimum 6 years for VSOP, minimum 10 years for XO 10).

Producer history Koya

Koya is connected to the historic Changyu wine group (founded in 1892). Changyu produced its first brandy in the early 20th century and developed Chateau Changyu Koya, investing in the facility in 2012 as the first chateau dedicated to brandy in China. KOYA expressions have received international recognition, including a Gold Medal at the Concours Mondial de Bruxelles 2015 and design awards in 2018; in 2019 KOYA XO succeeded in a blind tasting organized by The Drinks Business.

To produce cognac-style brandies highlighting the Ugni Blanc grape grown in the estate vineyards around the chateau, with attention to controlled fermentation methods, traditional distillation and aging in French oak to achieve harmonious, high-end expressions.
