Production method
Piñas are grown on the red soils of Jalisco, hand‑harvested by jimadors, slowly cooked, milled and fermented with a family yeast strain. Distillation is carried out twice in custom cognac‑style stills. Aged expressions are finished in charred white oak barrels (ex‑bourbon); some Cristalino variants undergo specific filtration processes to clarify the spirit.
