Production method

Artisanal production: piñas roasted in underground ovens fueled with firewood (encino, pino/tepeguaje), milling with a traditional tahona (for some expressions) or with press/mechanical milling (for others), spontaneous fermentation in open wooden vats and distillation in copper stills heated over direct fire. Some expressions are double distilled; the Pechuga undergoes a third distillation with festive ingredients.

Producer history Montelobos

Montelobos was developed as a project dedicated to artisanal mezcal production led by Iván Saldaña in collaboration with local mezcaleros (including Don Abel López). Official and trade sources report commercial activity beginning around 2011. In 2019 Campari Group acquired a controlling stake in the company (Casa Montelobos), including the brand and related assets. Production takes place in several palenques in Oaxaca and for some expressions in Puebla, with labels such as Espadín, Ensamble, Tobalá and the distinctive Pechuga.

Production philosophy

The project states a commitment to balanced agave flavor profiles and respect for traditional artisanal techniques: underground roasting of the piñas, spontaneous fermentation and small-batch distillation. Montelobos also emphasizes agricultural sustainability, the use of cultivated agaves and composting of production residues; the brand collaborates with conservation initiatives (partnership with the Wolf Conservation Center).
