Production method
For the Aqua Vitae "Le Pergole Torte", the pomace collected from the namesake vineyard is destined for artisanal distillation; the product is made in collaboration with the Distilleria Artigiana led by Gioacchino Nannoni. Distillation is carried out with steam-heated calderini / batch pot stills and the spirit is then aged in caratelli di rovere.
