Producer history Noble Coyote
Noble Coyote is led by Oaxacan biologist Bernardo Sada, who has devoted years to research and the sustainable cultivation of agaves in the San Luis Amatlán area. The project combines ecological farming practices and the craft of the maestro mezcalero to create small-batch mezcals with a distinct territorial identity.
Production philosophy
To promote agave biodiversity and plant resilience through seed germination (rather than sole propagation by cuttings), to highlight the terroir of San Luis Amatlán and to maintain artisanal processes that respect mezcalero traditions.
