According to official information, Espadín agave piñas (7–8 years) are hand-harvested by jimadors, cooked in underground ovens in small batches for about 10 days using local wood, milled with a tahona, naturally fermented in wooden vats with local water and finally double-distilled in 250-litre copper stills.
