Production method

Produced from very fresh cane juice pressed at the trapiche; fermentations in open-air pine vats using a rolling fermentation technique (continuous/rotating fermentation), occasional inoculation with mesquite bark decoction or pineapple skins; single distillation in a hybrid pot/column copper still with a 6-plate column (cycle of about 9 hours); cuts and blending made to obtain the bottling strength (54% ABV).

Ageing

For Añejo expressions, maturation in casks (generally American oak) for 18–24 months; the aging program began with ex-tequila casks and evolved toward the use of proprietary barrels, with variable periods and occasional single-cask releases.

Producer history Paranubes

Paranubes was born as a project to promote the work of local producer José Luis Carrera, whose family has produced sugarcane aguardiente for at least three generations in the Sierra Mazateca. The brand documents the collaboration with Carrera and the development of both unaged and aged expressions starting from locally grown fresh cane juice.

Protection of terroir and pure expression of cane juice: artisanal production, spontaneous fermentations with indigenous yeasts, no additives and bottling at proof to preserve the spirit's personality and its connection to the territory and local growers.
